fermentation. We look forward to sharing our experience with you and
answering any questions that you might have.

Xam and Lydia are professional chefs and instructors. We live in
Olympia, WA where we own and operate Heart Chakralates – a small
business that spreads the love of allergen and sugar-free chocolate
and raw, sprouted cookies to our community. At home, we make nearly
all of our own food from scratch with the same Love and Intention we
put into our chocolate and cookies. Lydia brings her amazing Love and
talent to the food realm with constant inspiration and creativity. She
has been fermenting kefir and sauerkraut at home since 2004. Nutrition
has been a lifelong passion for her – having studied on her own
since 2000. Lydia is a certified Yoga instructor, body-worker and has
extensively studied Ayurvedic nutrition. Lydia is the founder of Heart
Chakralates and has developed a completely sugar-free, allergen free
chocolate that opens the heart! Xam has been a raw food chef and
instructor since 2007 learning the art in Asheville, NC from private
teachers. He has taught workshops, given talks on food and shared
cookies and recipes with the community of Asheville before moving to
Olympia, WA in 2010. He has a passion for brewing and bottling his own
kombucha, incorporating sprouted nuts and seeds into recipes and
growing his own veggies. Xam continues to learn and teach about
nutrition, while experimenting with food and coming closer and closer
to reaching balance between body and Nature. Both follow the teachings
of Weston A. Price, who found that indigenous, pre-modern tribes
around the world had perfect health (and teeth!) without the use of
modern medicine. Our goal is to find our way back to the traditional
diet of our ancestors and grow to be healthier individuals.
